NOLA is slang for New Orleans, Louisiana.
A Po’Boy is THE iconic sandwich in Creole/Cajun cuisine. It’s made with French bread (crusty, not the soft variety)- sometimes buttered- and usually “fully dressed” with mayo, shredded lettuce & tomato slices. The fillings are usually some kind of fried seafood. The roast beef Po’Boy is the major exception. The buttered bread is the same, but it’s usually just filled with sliced roast beef with a good brown gravy.
Tabasco or other hot sauces are typical additions for most fans.
