The reason why so many "just don't understand" what Fight Club is about is because the movie ultimately doesn't say that much. People see what they project onto the movie and mistake it for something the movie says. Which you can do with any movie, but this one actively encourages it.
My take: if someone doesn't understand what Fight Club is about, it's because they're taking how the movie was sold, with sex and violence, and they're not connecting that with what the movie has to say, which is about philosophy.

It's not the movie encouraging viewer mistakes. It's the distributor doing so.
