According to the D&D glossary, "Any creature with a Constitution score is a living creature. Constructs and undead are not living creatures." So yes, outsiders, plants and vermin are all fair game for a demilich. The description of the tarrasque's Swallow Whole ability just says "opponent of Huge or smaller size" with no restrictions on the type of creature. So I'd say that a Huge or smaller Undead or Construct can be swallowed. That table is independent of the size of the creature you are advancing. The size of the creature isn't important, only how many size categories it is being advanced, and the amount of damage it does. For example:

An Assassin Vine is usually Large, and does 1d6+7 damage, which is 1d6 base damage, plus +7 from 1.5 times its Strength bonus of +5 (I think).
Advancing it from Large to Huge, means the base damage increases from 1d6 to 1d8. And using Table 4-2, it gets +8 to Strength, so the new damage will be 1d8+13.
Advancing it further from Huge to Gargantuan, the base damage goes up from 1d8 to 2d6 (Table 4-3), and it gets another +8 to Strength, for a new damage output of 2d6+19.
Advancing it again from Gargantuan to Colossal, the base damage increased from 2d6 to 3d6, and it gets yet another +8 to Strength for a final damage total of 3d6+25.
(Someone else please check my maths, I regularly get this wrong.) Does that help?
