If it greatly offends you to be involved in organized play that uses this optional rule, find a group that doesn't use it. I wouldn't want to play in a game that uses the gritty rest optional rule - so I've not played in those games. I'm a grognard by most metrics. I probably come out on the older end of D&D player these days. I prefer older editions of the game. This optional rule doesn't bother me. There's enough diversity in the players of RPGs that you can find a group to support your playstyle. You can even find a game system that supports your playstyle.
