I don't think that a total list exists. The simple fact is that there are far too many products out there to easily make such a list, not to mention that a list of every monster out there would be quite useless to someone that doesn't own the oh 1844 products listed in Enworlds review database not to mention that many monsters are just terriable.
The chance of a total list of monsters in wizard of the coast products is slightly higher, but still unlikely, and still its unlikely to be useful.
If you really want to make a encounter chart you should look through the products you own and pick the monsters that best fit as using just cr as a guide for an encounter chart would produce very strange results.
