Let's see... Aboleths have 8 HD, and are huge aberrations. The Improving monsters section suggest that adding 4 aberration HD adds +1 to CR. Obviously, this won't work well in reverse, but it's a start. Let's go to 4 HD, and Large size first.

Large Aberration (Aquatic)

Challenge Rating: 5?
Treasure: Standard
Alignment: Usually lawful evil
Advancement: 5–8 HD (Large)
Level Adjustment: —

*includes the Strength modifier. The aboleth seems to be missing that one.
Enslave save DC becomes 15.
Psionics manifester level becomes 8th. The save DCs don't change.
Slime DC becomes 15.
Mucus Cloud DC becomes 15.

Keep in mind this is just a quick attempt at downscaling the aboleth. It seems reasonable at first glance to me, but I can't test it right now. Other changes that may be desireable would be to reduce the mental ability scores (propably only Wis and Cha), or reducing the Dexterity instead of increasing it (which came with substracting the normal adjustments for a size increase).
