If so, what statistics would you use?

Well, an animated human would get the 10 foot speed bonus for two legs, no hardness, and no Blind/Constrict/Trample.

Other than that, it would just be the standard Medium Animated Object stats.

This might well mess with a Cleric's head as he tries to turn them... I'd "graft" some weapons onto the hands as well, make them a bit more dangerous.

Just a random thought, but if the "corpse" was a set of human skeleton joined via wire or something, should it have some amount of hardness? Maybe 5 or so?

We've had a cleric waste a couple of Turn Attempts on a flesh golem before, too :)
Spoiler for the Eberron adventures published so far:
A recurring villain in these adventures is a changeling who likes to look like a vampire. E.g.: "... He has deathly white skin ... He smiles, flashing sharp fangs. ... he hisses, measuring you with a casual glance of his crimson gaze." He's also the leader of a bunch of fanatics who like to have undead around. His goal is to become a vampire one day; for now, he just plays the part.

Heh. Reminds me of something that once happened to us in 1E days...

The town was terrorised by a vampire. There was an eerie man who lived in the mansion on the hill overlooking the town. What were we supposed to think? :)

So when he got sick of us snooping around his mansion, he confronted us.

"You want a vampire? I'll give you a vampire!" he yelled... red eyes, fangs, bat wings, started flying around and chucking magic missiles...

He was an illusionist or magic-user using Fly and Change Self, who was just annoyed at the accusations. The real vampire was some woman we hadn't suspected at all...
