Probably because its so low-budget he wouldn't touch it...and the jokes are so lame that he wouldn't do them.
His (and his fellow comedian Brian Posehn) rpg/fantasy-related humor on shows like Reno 911, The Sarah Silverman Show, and The Comedians of Comedy tour is of much higher quality. Its also much drier than would work in a show like this.
Don't get me wrong- I'll give it a chance- but that trailer doesn't exactly inspire confidence.

With Oswalt and Posehn in charge, the show might have a chance. I'm not sure a show of that quality is going to last long.
