Jik'tu wouldn't know them of course but the noble might. Usually the one insulted issues a challenge. Then the other apologizes or accepts. The one challenged chooses rules (id say simply first blood/incapacity or death. Weapons are probably simple ones since they are supposed to be fair and they are the common denominator. However, if to the death and impromptu I'd say the parties would use whatever they have at hand.
