Love gnolls and yes I use the Hyena-stereotype when developing their culture. So far I have used a Half-fiend Gnoll (Ranger/Scrocerer) as a boss monster on an Island the PCs were forced to stop into whilst travelling (he had a pack of 2 headed dogs with him). The Gnoll stole an artifact from the PCs, who then had to go and get it back. They also saved the gnolls slave-bride and agreed to take her back to her family (which mission they are soon to undertake) I like the whole feral carrion-eater nature of gnolls and use the plaguebearer template (WoTC site) extensively to depict their 'repulsive' nature and disgusting habits - they will eat anything fresh bloody meat, carrion and even filth. Their culture is based on access to food and rights to eat. The major verbal insult in gnolldom is to say "I will eat the contents of your stomach" - it implies first that you will kill them by ripping open their stomachs and second that you will even claim their right to the food in their bellies. Gnoll society is however strangely loving in a peaceful chaotic and disfunctional kind of way. Mothers tend their whelps and are very protective of them, and the whelps of the alpha females are indulged by the whole pack who vomit for them very young pups and thus allow them to eat 'the contents of their stomachs' (again this heightens the above insult as this action is an intimate one between mother and pup bing usurped by a challenger) IMC I keep 'monster inflation' to a minimum by regionalising them. For instance Orcs are found in my old 'Yuan Empire' setting but not in the Hawaiki setting where the my current campaign is set. IMC the PCs started on an Island on which the only races were Human (including half-elf and half-Orc), Goblins, Gnomes, a family of Ogres and Sahuagin (with Sahuagin not playable). The PCs have met a single Lizardman (he was lost at sea and came ashore on the island to recuperate), a few halfling-like fey (encountered on yet another Island) and the above Gnoll.
