Epic One-shot, any suggestions?

OK, I'm planning on running an Epic one shot in a week's time, when my parents go on vacation, since then we'll have my house all day and night if we want; I need advice, since my last one went ary.

How can I make smaller enemies a threat to the players? Granted, I'm going to come up with some powerful enemies for them to fight(very powerful demons, like the Armageddon Beast from Armies of the Abyss comes to mind; also, dragons are always good, plus some epic level NPCs), but I'd also like to wear them down with hordes of creatures(I can definitely see the big bads of the adventure sending hordes of monsters at them like this), and because of how high the ACs can get(I once rolled up a 37th level character with a total AC of 75), and I hate the feeling of not being able to harm them at all; any suggestions on what I could use as horde creatures?

Also, what level should I set the characters to? I'm gonna run a chargen party on Thursday night, and I'm not sure what level I'm gonna put them at yet.

Update: Although I don't know what Angcuru's character is gonna be(he's asleep right now, resting up for Project Graduation tonite), I've talked to RakeRon and Vechs, and I know pretty much what their characters are gonna be(both approved, because of how utterly insane my epic world is); they're gonna be a pair of Reploids, a la Megaman X. Vechs is gonna play one who doesn't want to kill, modelled on X and Vash the Stampede, with a pair of Buster Cannons and the ability to analyze and absorb the powers of friend and foe alike; RakeRon is talking about doing a ninjutsu-styled Reploid similar to Zero, with the Laser Saber, with powers like in the Naruto manga or anime, as well as a few other surprises. Originally, I was hesitant to allow this, but then I figured what the hey, it's an epic game, it's a one-shot and they'll need all the firepower they can muster.

If that gives anybody a bit more info on my game, if they can build off of that, that'd be great.

Remember, a natural 20 always hits.

With that in mind:

HORDES of shadows (perhaps suitably advanced, and led by a paragon shadow?). Wave after wave after wave of the incorporeal drainers. Shadows use touch attacks (which effectively ignores some AC anyhow) and the strength drain adds up quite nicely.

I doubt it would kill the characters, but it might make them think twice.

Don't use the module in the Epic Level Handbook; it isn't very good.

I want to execute my idea of the shuriken throwing dude of bad-assness! Muahahahahaaaaaa. Get myself 3 +5 Triple-Throw Returning shurikens of EVERYTHING burst&power, rapid shot, manyshot....oooh...the carnage. Remember, you can throw 3 shurikens per attack, and with triple throw......
