This can be seen by looking at athletes. Hurdlers, long jumpers, etc. all have one thing in common, long legs. With dwarven legs not only being short, but rather disproportionately short in relation to their torso, and considering the heavier mass of a dwarf, I can full see where making exceptional feats of jumping are not something they can accomplish.
