Pixies are a surprisingly good option, aren't they?

I've also got some good use out of polymorphing into a leopard for stealth. If you allow for racial bonuses, and factor in its' 19dex and 16str, you get an automatic +8 to hide and move silently, +12 to balance, and +11 on climb and jump. Even with no ranks, that's enough to get by your typical dumb sentry guards. Just make sure you change back before they spot you, cause you can't cast spells without hands. Cast it on the party rogue, and watch him vanish from sight entirely...

Changing into a sahuagin or merfolk in an aquatic environment is nice, too, and you can still cast spells.

Kelvezu demon from MM2 is great for plane touched characters. 8d6 sneak and fantastic stats and natural armour.

Cave troll (MM3) is pretty good. Gives good Strength, Dexterity, and Constitution, as well as pounce, rake, rend, dazing blow, and improved grab. Lots of (ex) special attacks.
