Well, I guess with multiple windows and 24 Dexterity, anything is possible

24 Dex. Hmmph. Huge oozes are supposed to have ACs like 3, or 5, not seventeen.

Well, maybe it uses its semi-fluidity to squeeze and contort in ways that solid matter never could. So you could describe the dodge as "As Regdar's sword swings towards the ooze, there is a strange squishing sound, and the creature splits down the middle, leaving an unnatural hole where the attack would have struck. Caught off balance, Regdar is left striking empty air, and he draws his weapon back, surprised at the preternatural agility of such an oozy-looking creature."
