I believe... Having Mixed Species in the game is a good thing (from a narrative or background perspective if nothing else.) Having ONLY Half-Elves and Half-Orcs is a bad thing. Having the ability for most species to interbreed with each other and the stories that come out of them, is a good thing. Using the name 'Half' for any of them is a bad thing-- call them Mixed Species or Mixed Ancestries across the board. The game mechanics for Species features all suck and do almost nothing to really exemplify the totality of what a species is and what is truly important and unique about them-- especially when cramming them into just four basic game mechanics that barely get used once the character starts leveling up. From a mechanics point of view, having all of one parent's or taking a couple mechanics from each is merely putting lipstick on a pig-- it's a plate of suck regardless of which way you do it. So getting upset about which plate of suck WotC hands you to me seems like a massive waste of time and energy. Due to the fact that some players do actually care that much about these species mechanical features... WotC should use a couple pages in the Species section for a Mixed Ancestry entry that does indeed work just like their Multi-Classing rules-- identifying two Species mechanics for each Species that are the ones that come with and combine to form any Mixed Ancestry. So that whatever your parents are, you get two set features from one parent and two from the other. It's such a simple ask that why should WotC even waste time debating it? You can find two mechanics from each species that aren't going to create overpowered characters if they get mixed and matched... so just put the entry in the book for those players that feel it is important.
