Hold Spells Question

For the "Hold" spells (person, monster, etc.), the spell description reads, "Each round on its turn, the subject may attempt a new saving throw to end the effect (this is a full round action that does not provoke an AoO)."

In essence, the creature gets 2 saving throws before my character has another chance to act, correct? The subject gets a save when the spell is cast and, if the creature fails, it gets another on its turn. Am I reading this correctly?

Yep, but it would have wasted its entire turn making that 2nd saving throw.

Right. Immediately after the quoted line, the SRD says:

SRD said:
(This is a full-round action that does not provoke attacks of opportunity.)
So your caster will get at least one action before the foe can act, as long as it misses its initial save. Even so, you might be denied a chance at a Coup de Grace or other attack that depends on the target being helpless. Question: in this case, does the formerly-held foe get his full Dex bonus, etc.? It seems like he would.
