How do you make hunting monters fun/interesting?

I am with @Jd Smith1 . Have them hunt the monsters, and then have them come to the realization that the monsters are hunting them.

Here are some ways you could plot it:
  • They track the creatures deeper and deeper into the forest. Several days worth.
  • As they track, leave subtle clues: an empty campsite, one torn piece of chainmail, a knocked over tree, etc. I would just make a random list so you can roll.
  • Add weather elements, and if possible, natural elements. Have them make skill checks.
  • Sound. From chirpy and scats of squirrel play to only the wind in trees to silence.

The PCs have to camp in the woods for the night. At various times they hear rustles outside their camp, coming from one direction or another - it seems that somebody / something is scouting them out. In the morning they find tracks of various nocturnal animals in the appropriate directions - skunks, deer, youngling bear ... and an adult Great Cat.

They know the group is here, and will be on alert for trouble, may stalk the PCs, possibly lure them into danger / a trap / ambush.
