I shoot for Long Rests at the end of each session, though that doesn't always happen. I try to run/play in games every two weeks*, but because of real life schedules it can be quite some time between games and trying to remember what resources are spend or still fresh - or even getting back into the groove - can be difficult, so easiest to start fresh.

However, I never have and never would be willing to end a session in the middle of an active encounter - again for the same reasons above.

* Up until recently, for me I was in a run one/play one in alternate weeks.

Long Rests occur based on the time spent in game, not the time spent IRL. Except during planning sessions or traveling, we pretty much never end on a long rest.
