Modules are great for one night adventures in any system. Have the PCs make up characters of apprpriate levels allowing them to use pretty much anytyhing (it's one night, them them have fun). I really like to pull out the old modules from the early 80's that no one has gone through in 20 years. I allow them to meta game because they mess themselves up trying to recall things from so long ago. Another fun thing is gladitorial pits. Have specific guidelines and allow the PCs to make up characters to fight each other or to fight in a bigger prepared battle. THis is more combat oriented, but can be lots of fun. What else is there...the egg timer game. This is hoot. Each person makes up a PC. Someone randomly starts as the DM, his character goes to the background. Have a timer of a set time. When the timer goes off, either pass the DMing possibilities to the next person, or put all the characters in the middle and have them drawn at random. This can be silly and is a lot of fun if done right. If you have a good group and can take a little self exploration, have each person play another member of the group. :D
