What do you do when you want to see if monsters, from an other room, can hear a fight from where the PCs are? I want to know what are the chances to be hear when there is a door or not, if it's far or not. Is there any rules from that?

Scent, See Invisible, among other things should work.

Spot and Listen also works against invisible opponents, but it's pretty tough. DMG has the DCs listed under Invisibility.
