D&D 5E Magic Items from Monsters

So, we have a small, semi-AL group going (Chult Currently) on in my community. Usually I'm a player, but when our DM can't, well, DM, I fill in. So as to avoid a majority of spoilers, and because I enjoy doing my own stuff, I homebrew my own drag-drop modules, and I'm looking on some advice for future planning.

This last week I introduced a new NPC that I'm planning on being the quest giver for most of my future modules. He's a magic item merchant and my plan for future modules is he commissions the party to hunt down various monsters and harvest parts from them for the mage-smith to turn into magic items, and he will pay them with a piece of the merchandise. The reason I came here is to ask for advice on what monsters they can hunt down, I've got a short list already, but it's always nice to have more choices.

Just as a note, I would prefer if these were not from monsters exclusive to Chult, like I said, nice to have options. I also have not read the Draconomicon, so I may be be missing some stuff with the dragons.

My current list:
  • Dragons- Dragonscale mail, Dragonteeth daggers, Potions of Dragon Breath, Dragonslayers(forged with dragon blood), Dragon masks
  • Flail Snails- Antimagic (eventually Spellguard) Shields, Robes of Scintillating Colors
  • Jaculis- Boots of Striding and Springing, Cloaks of Invisibility
  • Displacer Beasts- Cloaks of Displacement
  • Zorbos- Homebrew items utilizing the Natural Armor and Destructive Claws
  • Giants (morality issues, but hey, I'll cross the bridge when I come to it)- Potions of Giant Strength, Belts of Giant Strength (Tanned Giant Skin), Giant Slayers(Giant Blood)
  • Behirs- Potions of Blue Dragon Breath
  • Tlincallis- Paralyzing Armor stuff
  • Bulettes- Bulette Armor
  • Remorhaz- Heated Body Armor
  • Yetis- Potions of White Dragon Breath, Snowy Camouflage Armor
