Vista Home Premium or Business 32bit (those are what you get with most current notebooks) should be fine for your area of application.
If you are worried about Vista, try to get a notebook with XP, but in my experience, Vista does work pretty well, when you have no fancy hardware issues, which you really should not have with a notebook that comes preinstalled with Vista.
I'm running Vista Ultimate since about a year now on my home PC and had almost no issues (and only rather minor ones, if any).
The bigger problem could be the choice of the Office Suite. You will surely need Microsoft Office, because of compatibility issues, but if you are very used to the Office 2003 and earlier versions, Office 2007 is vastly different from those. I like it better, but many do not.
