If you want to do Underworld, vampires and werewolves should cover things. Hybrids should be doable if you really want them - it's simply a matter of giving a PC access to the Werewolf Hero Class and the Vampire Hero Class and let them take levels in both. The character has to start as one of the two races (or use the optional rules for infectious lycanthropy) and spend a lot of levels developing their abilities, but they're there.
