New T-600 image from Terminator Salvation

That and the T-600 was explicitly mentioned in the first movie as the first infiltration model terminators. "The 600 series had rubber skin, we could spot them easily" or something like that was how Reese described them. I would have appreciated if it was at least plausible that the T-600 could have had some kind of infiltration skin.

My issue is that the only thing they could infiltrate is a american football team. That thing is built like a linebacker on steriods.

I don't understand your issue exactly. Are we being told this particular Terminator is an infiltrator? Is it just the vaguely humanoid features that are a point of contention? Seems reasonable that Skynet sees the value of a hunter-hiller droid that has similar mobility to a humn--never know if getting to those pesky humans means walking up stairs, or climbing into an overhead space, or manipulating a door handle. It's not always viable just to blast their into every spider hole. And the face? Maybe Skynet downloaded some books on psychological warfare.

I remember reading a thing that said the movie makers wanted the terminators to be larger and more bulky for this film to show that Skynet has yet to produce more sophisticated models that can be slimmed down and such. Their basically making a reference to computer development from room-size computers to laptops and such.

Interesting Idea except that the computer is the thing that shrinks, skeletons and pistons havent been an issue foe 50+ years already. If this is the way the producers want to get a point accross, then I worry about other parts of the movie as well.

The T-600 is an older model of the T-800. It isn't as if the T-800 had such realistic proportions ;-) Lets be honest, the T-800 would be easy to spot in a crowd. The T-600 just more so, and rubberskin wouldn't mean much, except on a distance. On a distance you might dress it up in a long coat and a hat and it might fool detection once or twice...

What I'm really interested in is wether or not it has socket joints ;-)
