Hi Lethol, first up, let me suggested that you don't spend too much time thinking about how you will build your character 3, 4 or more levels down the line. It's certainly good to have a general direction of where you would like to go, but the campaign can shape how you want to evolve your character, and I highly recommend allowing it. For myself, I was a 4th level Forest Gnome Sorcerer who had taken Tavern Brawler as my 4th level Feat for ABI, partially because I kept getting into bar fights, partially because my character had a short man complex, and partially because I wanted to bump up his 13 Con to 14 to get the +2. He began speaking to small beasts in the woods, asking for help in scouting ahead, and at some point the DM had one of them answer me. Turned out to be a powerful archfey who asked if I wanted the secrets to Fey power. I accepted, and at 5th level took my first Warlock level with pact of the ArchFey. From there I took 3 Warlock levels and took pact of the Chain, and bonded with an annoying sprite named Joy as my familiar. I then bounced back to Sorcerer to get 3rd level spells, and most recently back to Warlock to get my 2nd ABI (and finally get my Cha to 16). In combat, I primarily buff the party through Twin Enlarge or Twin Haste, then get as far away from danger as possible and Eldrich Blast away. As for what abilities you get. You get everything for the level you are in each class. So look to the sorcerer cantrips known, spells know and spells per day and add that to the warlock cantrips known, invocations known, spells known and spell slots. You get it all! And for what you should do? Do what you want! As long as you have at least a +2 in Charisma, you are meeting the base assumption of the game for combat effectiveness. For everything else, choose what you think is cool or makes a good character or will help your group. The one big disadvantage of multiclassing is delaying access to the higher power levels, and with casters, that means you'll be behind the curve in terms of what level spells you can cast (like in my example where I didn't get access to Fireball until my 8th character level, whereas a straight sorcerer would have gotten it at 5th). The biggest advantage is the increased flexibility and wider skill set. Hope that helps! No matter what you choose, I hope you have a great time and become a lifelong player!
