We are switching from 5E and I am planning to play a Univeral Wizard with Spell Blending with Flexible spellcasting Archetype. I am also planning to take Witch as an archetype for more spells. We are playing with the free archetype. I am trying to recreate the Order of the Scribes Wizard. I have multiple questions so hopefully I am not too annoying.
Also, the GM is allowing me to do most of what I want but I personally want to know the rules.

Am I able to select another Class archetype ie Inventor, or am I allowed only to select one class Archetype?
Here are my best answers for your questions; I'm new to Pathfinder, myself, but I've been reading it on and off since 2e was released, with a definite uptick since about War of Immortals or maybe Rage of Elements.
Does Spell Blending work with the Witch spell slots?
It should, though you can't spell blend with just witch slots until you get two of them at the same rank with the Patron Breadth feat.

You should be able to. The feature specifies "two spell slots of the same rank" with no further clarification. I am unsure how that would work with the class to which the new spell slot must or should be assigned. Seems like an "ask the GM" thing.

You only have one proficiency for all of your spells, so all spells you cast use the proficiency given by your Wizard class features. The exact DC and spell attack would only vary based on the ability score. Since Witches are Int-based, you should have the same DC as Wizard, barring anything that would only add to one or the other (some weird magic implement, maybe?). If you could find an Int-based Primal caster, that would use the same DC.

Definitely an "ask the GM" area. I think the intent would be only for the class selected, but I'm not sure. This could be a custom feat under the flexible spellcasting dedication.

Yes. Or any other spell so long as you take the Widen action then immediately follow it with the Cast a Spell action. That is the general rule for Spellshape feats, if I recall correctly.

This might change when the remastered form of Flexible spellcasting becomes available (I'm guessing it's somewhere on the planned schedule, but don't quote me on that), but I think the rules indicate that the bonus spells and slots from other class features (like School spells for Wizards) are unchanged by the Flexible Spellcasting archetype, meaning that if they must be prepared in those specific extra slots, that is still the case for a flexible spellcaster. I'd still ask my GM, though. Maybe they could create a custom feat that would allow the extra flexibility.

The "use familiar as bonded item" part definitely steps on the toes of the Improved Familiar Attunement thesis, and a creature (even a construct) does not typically count as an object. I would also question the wisdom of using a destroyable familiar as your spellbook. Maybe if you asked your GM, they could make that feature from the Scribes wizard (where you can replace your spellbook quickly and easily) a custom feat for you. A lot of this depends on how your GM handles familiars (or how PF does; that's not an area about which I've read much) -- does the (construct) familiar take a present object and make it into a familiar, or does it create/summon a familiar that takes the shape of an object?

The rules for this are pretty easy: you can start a new archetype once you have "completed" your first by taking two more feats (so a total of three including Witch Dedication). That would be doable as early as level 6 if you are using the Free Archetype variant by taking both the Flexible Spellcasting "archetype" and the Witch Dedication at level 2, then the two "level 4" Witch Archetype feats ("Basic Witch Spellcasting" and "Basic Witchcraft") at level 4
