Now, +16 Con, -10 Dex, -10 Wis, -10 Cha is a balanced if lopsided stat set, but my guess is that those -10s aren't really all that appealing, so let's massage the numbers lower into +8 Con -4 Dex, -4 Wis, -4 Cha territory. This admittedly lowers the DC for the Paralysis, though. Take Ability Focus from the MM as a feat to keep that DC in the stratosphere. Anyway, I'd say LA +3 for Blindsight, Electrical Immunity, Paralysis, and Transparent as written. Probably LA +4 if Transparent (and I think it should) gives you a +14 or such to Hide. Either way, it's right about where you want it to be, I expect.
A Living Spell would probably have quite a bit of LA. We're looking at DR 10/magic, good SR (to start with at least), Deflection to AC, a Resistance bonus on all saves, possibly a very good speed, Ooze traits (which grant a bunch of immunities), and of course the ability to cast their spell (or spells) at will as part of a slam attack. The Gelatinous Cube is probably a bit more manageable. A big question would be whether the transparent ability (which means that even when not hiding they count as Hiding with a 15) would become even better for an intelligent one that was actually hiding. My thought would be yes, but if so, that's quite a powerful ability. Now, gelatinous cubes are size Huge, and they have some extra acid damage, an Engulf attack, a powerful Paralysis per hit that is Con-based, a massive +16 to Con, Blindsight 60 Feet, Immunity to Electricity, and Ooze traits. On the other hand, all the non-Con stats but Strength and Int are set at 1. As a character, you probably wouldn't fit in places at that size anyway, so let's make a mini Gel-Cube that's Size Medium. We can keep the stats, since the Strength wasn't actually even that high. Okay, so Ooze HD, and 4 at that, will pay for Acid, Engulf, and the Ooze Traits. That means we have to deal with the rest of it with LA.
