Don't meddle in the affairs of Wizards, for they are subtle, and quick to anger.

Please either confirm this, or correct me.

I want to make sure everything is perfect with the quote, including punctuation and capitalization.

Right.

That would be:

Do not meddle in the affairs of Wizards, for they are subtle and quick to anger.

It's not a Gandalf quote though.

It's a quote from Gildor, the leader of the High Elves that the hobbits meet on the road to Bree.

It's from The Fellowship of the Ring, Book One, Chapter III: Three is Company:

Gildor was silent for a moment. 'I do not like this news,' he said at last. 'That Gandalf should be late, does not bode well. But it is said: Do not meddle in the affairs of Wizards, for they are subtle and quick to anger. The choice is yours: to go or wait.
'And it is also said,' answered Frodo: 'Go not to the Elves for counsel, for they will say both no and yes.'
