Here's the way we did it, and I think it's correct. Forget about CR - that does not matter. LA might matter, but I think this is listed in the DMG as a mount available. Don't make this harder than it is. Second, The number of hit die the dog has is the number of hit die the dog has. Full benefits accrue - SR, resistences, etc. Simplicity itself. None of this is game-breaking stuff, it will only help the mount survive and make it a more viable part of the game. Here's what I came up with at 16th level paladin for a half-celestial riding dog: Hit Dice: 10d8+40 (104 hp)(base 2 hit die + 8 hit die from Paladin's Mount) Init: +4 Speed : 50 ft. (10 squares), Fly, 50ft. (good) AC: 29 (+4 Dex, +15 natural), touch 14, flat-footed 25 Special Qualities: Low-light vision, scent Darkvision out to 60 feet. Immunity to disease. Resistance to acid 10, cold 10, and electricity 10. DR 5/Magic (Damage reduction: 5/magic (if HD 11 or less) or 10/magic (if HD 12 or more)). Bite is treated as a magic weapon for the purpose of overcoming damage reduction. SR 20. (Spell resistance equal to creature’s HD + 10 (maximum 35)). +4 racial bonus on Fortitude saves against poison. Improved Speed Empathic link Improved evasion Share spells Share saving throws Feathered wings (fly with good maneuverability) Saves: Fort +14 (18 vs. Poison), Ref +11, Will +8 (Mount/Pal Base: Fort +7/+10, Ref +7/+5, Will +3/+5) Abilities: Str 23, Dex 18, Con 18, Int 9, Wis 16, Cha 10 (+1 Str and Dex for 4th and 8th Hit Die) Level Adjustment (if anyone cares): +6 (+2 Half-Celestial, +2 Paladin's Mount) A few other things, plus equipment of course, but that's the essence of it.
