Presumably because there is some advantage to doing so. The Wizard does the same thing, but the spell is actually <em>cast</em> on initiative, and then held through those rest beats until the opportunity presents itself to release. That's why the restriction on the fighter is "less stuff" and the restriction on the wizard is "concentration, loss of spell slot". They're different restrictions, but they both have their consequences. They both make sense narratively.
