The main issue with this is that adventurers are more like the hunters that killed off the buffalo for the railroads rather than the Native Americans that lived off of them. Except for high value items such as alchemy reagents or material components for spells or making magic items, it is probably just too much trouble to harvest everything and then transport it back to civilization. Just go in, get the treasure and leave the bodies to rot. There are several ways it could be part of a game. One could always run a tribal game, where the adventurer party is actually an entire tribe and the PCs are just the hunters/warriors. The a middle point would be something like Delicious in Dungeon where the adventurer party needs to hurry, so instead of going back to get supplies, they decide to eat what they kill while going through the dungeon. Newer rules for creating magic items require getting special components first that require an adventure. Thus, even if not doing it for themselves, they could be hired to go out and hunt a creature for said components. Killing things close to villages or towns could also be another treasure as they sell such items to interested parties. Creatures with resistances or high natural AC would make good armor and goods. Butchering and preserving the needed items would require some skills and time where they would have to deal with environmental and local problems.
