I was surprised by the lack of a classic sea serpent in Ghosts of Saltmarsh... Sea Serpent Gargantuan monstrosity, unaligned Armor Class 17 (natural armor) Hit Points 217 (14d20+70) Speed 0 ft, swim 40 ft STR 23 (+6) DEX 10 (+0) CON 21 (+5) INT 2 (-4) WIS 16 (+3) CHA 6 (-2) Skills Perception +7 Senses darkvision 60 ft, passive Perception 17 Languages - Challenge 10 (5,900 XP) Hold Breath. The sea serpent can hold its breath for 2 hours. Siege Monster. The sea serpent deals double damage when attacking objects, structures, and ships. Actions Multiattack. The sea serpent makes two attacks: one bite and one tail. It can't make both attacks against the same target unless the target is Huge or Gargantuan. Bite. +10 to hit, one target. Hit: 27 (6d6+6) piercing damage. Tail. +10 to hit, one target. Hit: 20 (4d6+6) bludgeoning damage; if the target is a creature, it must make a DC 18 Strength saving throw or be knocked prone. A sea serpent resembles a huge snake with a crocodile's head and armored scales, propelled through the water by four huge flippers. The usual sea serpent is about 80 feet long and 10 tons. Sea serpents usually eat large fish (such as tuna, swordfish, and sharks), sea turtles, dolphins and porpoises, and small whales. A sea serpent poses a severe danger to smaller vessels. Fishing boats especially often fall prey to these creatures, as the smell of frightened fish attracts the sea serpent. Merfolk, locathah, and aquatic elves greatly fear these creatures.
