With the disclaimer that I'm not a game designer and that there'd need to be proficiency per long rest limits etc applied for balance, just off the top of my head some options I'd consider messing with would be: advantage on grapple and escape checks, ability to use Grease centered on self, ability to use reaction to gain resistance against an incoming physical attack, ability to disarm weapons that hit you by absorbing them. Temporarily gain reach. Temporarily split in two. An acid touch attack. Give them some downsides to balance them if you have to. Disadvantage on saves to avoid thirst or environmental heat, for example. At least give them some sort of natural armour ability so they can function in combat without automatically crippling their iconic racial ability. Or hell, give them the ability to spend half their movement (or something) to don/doff any armour by pouring themselves into it, There's load of possibilities. But if you're having an ooze PC race, put the ooziness front and centre, not as an afterthought ribbon ability.
