The ones that were the biggest influence, KotOR 1 and 2, are not part of the current continuity, but Fallen Order and its sequel are. The writer also plays Star Wars tabletop RPGs, but I’m not sure which one. KotOR was loosely based on Star Wars D20.
In KotOR, the backstory for the player character is they were a jedi who turned to the dark side in order to defeat the Mandalorians. They were then captured by the jedi, and had their mind wiped (just like Mae). Thus, the player starts out not knowing this (and has to choose a non-force class). Later on in the game they get to train as a Jedi, and later still as a Sith, and can choose which path to follow in the final part of the game. The game uses a point system for tracking lightside/darkside. One of the companion characters is a grey jedi, who can use both the light and dark side without committing to either. In KotOR 2, the player character's mentor is another grey jedi, who also turns out to be the main villain. One of the Sith Lords in KotOR 2 is called Darth Sion. I mention this as it was referenced in Ahsoka - The Eye of Sion. Sion is basically unkillable as he sustains his life with the force. He looks like lich.
It's not really a spoiler, but Qimir's convertible lightsabre is straight out of Fallen Order.
