Erm they did fight the Goa'uld, in the SG-1 episode The Fifth Race, Thor tells O'Neil that there used to be an alliance of four races that stood against the Goa'uld, they were the Ancients, the Asgard, the Nox and another one (the name of which I can never remember), and that Humanity was well on the way to becoming the fifth race.

You know what. I completely forgot about Thor telling him that. I remember the alliance but for some reason didn't remember that they fought the Goa'uld.
