You can't use off hand parry and get the AC bonus from 2 defending weapons.
I didn't think so either, but based on the FAQ, all you need is the "attack or full attack action".

From the FAQ:
Q: Do you have to actively wield a weapon of defending to use its power? Or could you hold a longsword of defending in your left hand, not use it to attack (so you are not actually using the two weapons) and still wield a sword in your right hand without penalties? Or is the defending bonus considered part of the normal parrying that happens in the background?

A: Using a weapon of defending works just like the Expertise feat. (You have to use an attack or full attack action, see previous question.) You can't use the weapon like a shield; if you hold the weapon in your off hand and claim a AC bonus for it, you suffer all the penalties for fighting with two weapons, even if you don't actually attack with the weapon.

Didn't See the cover bonus, and I looked harder and found the 2nd Cleric Domain (Kids, Don't post past your bedtime).

Is there any compelling reason to limit AC man to standard value equipment. Given that he is an exercise in the Possible rather than the Likely give the man unlimited Gold pieces.

If you could give use a full breakdown of his feats and skills, that would be nice to. Just looking at his (or her) classes I think to myself "Self: Dump the Ranger lvl or 1 Paladin lvl or 1 Monk lvl and take a Devoted Defender lvl or 3". One Devoted Defender is +1 AC, Three is +2 AC. But I don't know if he has space for Alertness and some skills.

Would there be a way for you to get animal affinity for your dex, int, wis, and cha. This stacks with Cat's grace and the other various magical increses to your stats. These could also be empowered by the feat in one of the dragon issues, for the cost of 2 more power points.
