Supernatural and special abilities while Polymorphed?

If someone polymorphs, do they lose their Su and Sp abilities that don't rely on their natural form? For instance... do dragons lose their breath weapon? What about their natural armor bonus? Spell resistance? Or more to the point, would an efreet that polymorphed into an elf lose its fire immunity, or planeshift? Slam attack?
