Sure Striking and Defending Weapons

I don't have my books, so forgive if I get some details wrong. Would it be possible to have a weapon that was both Sure Striking (effective +5 vs. damage reduction) and Defending and then sink all the +5 into defense, but still overcome most (if not all) damage reduction in the game?

Yes and no. :)

If you had a +5 sure striking defending weapon, you could get a +5 bonus to your AC and still penetrate damage reduction as if it was a +5 weapon. But you don`t get the attack and damage bonus from the enhancement, so it does not really help you much.
And it would be a weapon with a market price of +7 weapon, and probably, there are much more things I could do with 6 "free" points. (Flaming, Screaming, Keen, Sure Striking +3, as a very easy example)

Do you mean a +1 weapon of sure striking and defending? As far as I know the +5 vs dr can't be put into the defending, although when you put enhancement bonus into defending it still can hit as if it had a +5 bonus for dr purposes from the sure striking ability.

Defending

A defender weapon allows the wielder to transfer some or all of the sword’s enhancement bonus to his AC as a special bonus that stacks with all others. As a free action, the wielder chooses how to allocate the weapon’s enhancement bonus at the start of his turn before using the weapon, and the effect to AC lasts until his next turn.

Caster Level: 8th; Prerequisites: Craft Magic Arms and Armor, shield or shield of faith; Market Price: +1 bonus.

Nope, I was thinking of a +7 (eqv) weapon. I'm hoping (re: praying) that Epic Levels translates well to Rokugan and was playing around with some high-level Samurai ideas. This was for an off-wielded Wakazashi.

So long as it is a +5 defending sure-striking weapon, absolutely.

No. A sure striking weapon doesn't have a +5 enhancement bonus; it's merely treated _as if_ it has a +5 bonus for the purpose for overcoming DR. For example, you don't get +5 to your attack and damage rolls. Since it doesn't have a +5 enhancement bonus, you can't swap it out for an AC bonus via the defending enchantment.
