How did you do initiative? Just roll one at the start, or create different initiative orders when combats sprang up?

I did something like this 2 weeks ago. Because of weather, our in person game got canceled. Since we recently started using maptools for one traveling player, and in person, I threw together a delve the night before.

The theme was simple, Abyssal Arena. No one knew anything except the name. Setup was simple, they were there for fame/fortune. They fought three encounters and then the demon in charge, said...Only one may go home. So they battled it out. They had a lot of fun with it.
