I have done something like this and it was really fun to play. I would suggest looking into the Savage species and get the multigrab, improved multigrab, and greater multigrab feats this allows you to grapple with single parts of your body while not sustaining any penalty to the grapple or yourself when grappling. Their are various sorts of monstrous races that have improved grab but all have racial hit die, though the feral template will allow you to take that ability, a couple sets of natural weapons, natural armor, major boons to str. and con., and fast healing later on for a measily level one adjustment. Since your strength is boosted by 4 it won't take much for you to take powerful build feat at level one. There is also a couple of aberrant feats that help with grappling aberrant grip gives a boost to grapple. Aberrant reach increases threat range by five feet, then improved reach from Savage Species increases it another five(need the first), not necessary but handy. Brutal throw I believe is almost a must allows strength to account for accuracy for ranged attacks. Get into the Hulking hurler PrC in the complete warrior and with the throw anything ability you can justify using enemies as ammo against other enemies. Your going have to ask around for some boosts to grapple though, however I think I gave a good solid base to start for a baddy flinging catapult.
