Go in a different direction- What is spawning the undead in this dungeon is a semi-intelligent magic item. Essentially, the BBEG (more on him later) who formerly owned the place has left (this will give you room for a followup adventure), but his SoulFurnace- an artifact that he used to produce undead- has been left running. As long as it is supplied with dead bodies, it can make zombies or skeletons. when supplied with living bodies, it creates intelligent undead, and the BBEG had work crews of undead who were sent to continuously supply the SoulFurnace. Think of it somehwat like an undead version of the Alien Queen's chamber. Why do this? Because the players will be expecting a BBEG, not a semi-intelligent artifact. They won't know (at least initially) what to hit. When they eventually figure out they need to destroy the SoulFurnace, they'll try and fail. They must cart it off to be destroyed by ___________________. As they cart it off, though, they are repeatedly attacked both by the work crews and the final few undead that the SoulForge is in the process of creating. They may hate you, but it will be a good kind of hate! After the SoulForge is destroyed, they can go about their lives, carousing and adventuring...until BBEG comes looking for the "meddling kids" who took his SoulForge. THEN throw a Deathknight or some such at them, leaving a trail of destroyed villages behind it as it searches for them. They'll be the hunted, not the hunters. After taking down the Deathknight, though, they'll still have to take down the BBEG...
