I'm assuming your just talking about bringing back skill points and not the whole bloated 3.X skill list. As for number of skill points, just use each class' default number of starting skills as their skill points per level. Jedi do get a bit short-changed, but since their main schtick relies on a single skill and there's plenty of UtF skill substitution talents out there, they shouldn't be hammered too badly. Cross-class skills would presumably have the "2 points equal 1 rank" function if going the 3.X way, so be sure to note that characters with a high Intelligence are going to much more broadly trained in skills than normal. Just bear in mind that in dropping the level bonus to skill checks, you're going to run into the same issue 3.X had where you've got one or two characters that are hyper-specialized in certain skills that it becomes nigh impossible to challenge them without making it impossible for less specialized characters to stand a chance. Case in point from a 3.X game I heard about, the GM kept setting Spot and Listen checks at astronomical DCs (high 20's to low 30s) for a group of 8th level characters because one PC had managed to get a bonus on both skills that was in the high teens while the rest of the party had yet to break into the teens for those skills. Bad DM'ing I know, but it is a possibility to be considered in regards to designing encounters for your PCs. Another thing to bear in mind is you may want to make some of the old "+2/+2 competence bonus to skill check" feats available, either the broad selection from the RCR, or the Monte Cook alternative of a single feat that provides the +2/+2 competence bonus, but the player selects two skills of their choice. Bear in mind that it's a competence bonus, and thus wouldn't stack with the +5 competence bonus that Skill Focus provides.
