Things to keep in mind for any multiclass:

Know what level range you'll be playing over. Sometime things that look cool 'this level' end up delaying things that would be cool 'that level' and you get buyers remorse.
Classes get a big power bump at 5th. If you are pushing it off, be prepared to lag a bit behind until you catch up.
Delaying/missing ASI helps prevent cherry picking, but if you aren't careful is something you can shoot yourself in the foot with.
Things for a sorcerer/warlock:

Your Eldrictch Blast (and other cantrips) will continue to advance with character level. That said, there is nothing special about it among other cantrip until you start to spend class features - invocations - on it. So if you want to maximize it, be aware you'll be taking at least a 2nd warlock level for Agonizing Blast and possibly others.
Your spell slots stack - a sorcerer (and every other caster) as Spellcasting, but a Warlock has Pact Magic. So Warlock levels will not increase your sorcerer spell slots up to higher levels.
Your spells known, including spell level, are based on class level. So if you are going up in both, you will be lagging farther and farther behind the single classes characters (and designer expectations) about what spell levels you can cast.
During normal adventuring (as opposed to down time), you will not have "coffeelock" playstyle at low levels. At Warlock 1, you can get 1 SP per short rest if you don't cast your spell, and it takes 2 SP just to get a 1st level sorcerer spell slot. At 2nd level it's a bit better - if you have a short rest and cast none of your warlock slots, you can get 2 SP, which can translate to a single slot. Gets nicer once your warlock slots level up at 3rd, but remember what level you are playing to -- lots of mostly ineffective slots because they are levels behind the single classed characters means lots of wimpy actions.
You can cast sorcerer spells just fine wearing your new armor proficiency. It won't be quite as good as Mage Armor until you find some magical light armor, but that saves you a slot to have to cast it.
