When do you let players craft items?

It seems most adventures or campaigns take place when time is of the essence and there isn't much downtime between adventures. Even one-shot games can take several gaming sessions to complete.

When, in your campaigns, do you allow your players the weeks needed to craft items or research spells?

Are you sure this is a rules question?

I do know that in 3.5 you can craft an item at a rate of 8 hours per day, so you can sleep 8 hours, craft 8 hours, and adventure 8 hours... all within normal confines of the rules. When they are too busy, they can take a day to just adventure, but they need to track how far along they are.

I was thinking about letting players craft during the day, however, most craft skills need some type of workshop like a forge, alchemist lab etc.

I don't dictate their time, so yes. If they would prefer to spend a week scribing scrolls rather than following adventure hooks I have no problem with that. If they ignore time-intensive story points to do so there could be repercussions, however. As a DM, though, I make it a point to not swamp my players with race-against-the-clock adventures; it is an adventure device that can easily lose its appeal when overplayed.
