Because it offers something that fits a concept better/works easier than the magic system does. If nothing in psionics does that, you have no reason to choose psionics. As to what it is that fits better, you'll have to figure that out yourself. For instance a Wilder is a blaster who draws upon surging emotion and barely-controlled half-understood inner powers. I have, and I do, so I use them. Several people do not like them, and they don't use them.
If you use Psionics, you'll gain a new mechanic for magic, and some new character building options. But the price is: you'll have a whole new stack of rules to learn.
Personally, I like the flexibility of manifesting (vs. even spontaneous spellcasting), and there are some Psionic powers that are just really, really cool (like time hop).
