What spells exactly do the new familiar gains ?

These are in addition
to any bonus spells known by the familiar based on the
witch’s level and her patron (see patron spells).

The bonus spells refer to the Patron spells. For example, if the Witch were 5th level and bonded a new familiar, she would get the Patron spells that are gained at 2nd and 4th level.

As for voluntarily replacing a familiar (such as through the Improved Familiar feat), this is something that you may wish to talk about with your GM. Since a witch can't keep a backup familiar, the same way a wizard can with a spellbook, the loss can be debilitating (even if spell recovery is a bit easier).

If your GM is up for it, you can just give the familiar change a 'fluff reason' (same spirit inhabits an elemental now, instead of a cat, etc.) and keep the same list of spells known. If not, they may insist you rebuild your spell list in exchange for the more powerful familiar.
