I made a number of rulings tonight, none of which I am confident about - in my game I make a quick ruling and we move on generally. If I find out I was wrong I let everybody know via my DM notes, and we get it right the next time. Enough blathering and on with the questions:

1. Does magic missile hit an ethereal creature?

2. Can someone armed with a crossbow employ the Rapid Shot feat?

3. If no to #2, can someone with the feat Rapid Reload (light crossbow) employ the Rapid Shot feat?

Thanks for your help - now you know why I mostly stick to the core rules

1. Yup.

A force effect originating on the Material Plane extends onto the Ethereal Plane, so that a wall of force blocks an ethereal creature, and a magic missile can strike one (provided the spellcaster can see the ethereal target). Gaze effects and abjurations also extend from the Material Plane to the Ethereal Plane. None of these effects extend from the Ethereal Plane to the Material Plane.

2. Generally no, but...

3. Yup.
