Yeah, the other three were just dudes on the back of a horse. Wonder if using "Sagitarius" would work.
Huh, that's an interesting trickery idea!

In my experimentation thus far, 'centaur' on its own (plus a style) as you did was the only semi-reliable way to get it to draw a centaur, though you end up with no control on what the centaur is doing, carrying, or wearing. Most other prompts have created very weird results, especially:
some unholy amalgamonstrosity of horse and human limbs.
... which is a great description of what the AI spits out. :p

Here are some creatures/NPCs I've generated for my current campaign.

Zeberock, the Thundering Beast - an ancient lesser Primordial that resides in the Billowing Squall. He is a creature with body made of black storm clouds and fangs, horns, and claws made of pure electric plasma. He stalks his territory, hunting the corrupt and demonic creatures that foolishly wander into his territory. Here he waits for the being prophesied by the cosmos to be the purest embodiment of the Great Storm, so that he may test their inner tempest against his own in glorious combat.

Alpha Vorvolaka - considered to be the very first vampiric creatures ever created, these beings are so rare as to be little more then legends across most of the multiverse. Despite their monstrous appearance, these undead entities are both highly intelligent and surprisingly amicable when encountered by others despite their enigmatic nature. They are occasionally drawn to those that have some variation on the vampirism, and have been known to share their own blood to empower these chosen few with greater abilities and control over their affliction in exchange for service or some other secret condition. Others might attempt to seek these creatures out to learn the secrets to Sangromancy/Hemomancy, the arcane art of manipulating the blood of oneself and others, and using it to empower your spells.

Zumon, Devourer of Old Divinity - A strange celestial creature bounded by powerful ancient chains of divine origins to an unbreakable pillar. Zumon is a pitiful soul, once a starved, lowly goat that devoured the corpse of a dead god in desperation, this act elevated the creature to the status of deityhood it was not prepared for, causing the creature to rampage as it's mind was overwhelmed by the ancient power of its divine transformation. The weathered gods of the Astral Sea, still recovering from their war with the Primodials, were forced to band together to contain this creature but could not kill it, and so instead bound it to the horrid plane of Carceri, the Red Prison. There the creature raged alone, and was slowly forgotten about by the rest of the multiverse. At one point however, the raging stopped, and want was once a mindless creature would become curious of what it was and of the world beyond it's prison. Now this demigod seeks out others, gifting them with power in exchange for knowledge and the ability to see beyond it's limited space. The more knowledge it has gained, the more powerful it has become, and by extension the more powerful the gifts it can bestow. To what purpose it has to seek this knowledge, even he knows not. Maybe this desire stems from the ambitions of the dead god he consumed all those years ago, or maybe its the desire to seek out a purpose for his budding divinity. Either way, Zumon can be a great boon to any who accept his collected wisdom and divine power.

Kimaria, Queen of Shadow and Ice - a powerful monstrosity with the appearance of an ant queen made of ice covered in a multitude of mushrooms and fungus infused with the necromantic energies of the Shadowfell. Kimaria rules over her various breeds of ant children that hunt and forage in the corrupted lands of their tainted and frost covered forest home. Though wary of powerful outsiders, Kimaria and her children are not initially hostile to others unless provoked, and her pragmatic views make her understanding of any unintended conflicts, as the lands are harsh and often require harsh actions for the good of ones own survival. Should any outsider gain the queen's favor, she may be willing to gift them with ant silk infused with the essence of elemental ice or the darkness of the Shadowfell, or one of the various magical mushrooms that are grown and cultivated by the ants for the use in potions and other alchemical creations.

A couple more creatures!

Renegade Draegloth - these demonic creatures renounced their creator, Lolth the Spider Queen, after falling through the planar scars that connected the Abyss to the old and forgotten Material Realm of Salvera. While many of these demons still revel in their evil and chaotic nature, a few of these monstrous creatures come to feel a rekindling to there once mortal soul, and now seek to strengthen there connection to that remnant of their old mortal selves. While typically all demons are reviled and hunted by mortals of Salvera, the Order of the Serpents and the Serpent Gods they serve recognize the strange contradiction these outsider demons represent and attempt to aid them in finding some means to connect to the great cycle of souls so that they may better shed the evil nature that they grapple with and find peace and new purpose. In exchange they serve as loyal servant in the order, and many even become highly regarded and high ranking members within this organization.

Blight Swarm Dragons - these insectile dragons are not actually intrinsically evil despite being native to the lower planes, though they are no less capable of destruction and harm then any other denizen that reside in the evil aligned planes. These creatures simply prefer places of decay, pestilence, and other inhospitable conditions that are common in places like Carceri, Abyss, Hades, and so on. These dragons are never seen without their personal swarm of fiendish, venomous insects that coexist with the dragon in a strange and somewhat parasitic form of symbiosis. The insects live within the bodies of these dragons, using them as well protected and feed on the blood of the creature both for nourishment and to help keep the dragon free of poison, disease, or any other foreign substances. In exchange the insects obey the command of the dragon, aiding it in various task and utilizing their numbers and blight inducing venom during combat.

Dragon Lover
Welcome to the horrid pocket dimension, known as Scornhollow, a place where a cataclysmic battle took place eons ago during the War of the Dawn. This place was created from the energies of Carceri, the Abyss, the Shadowfell, and the Elemental Chaos slowly leaking into the forgotten Material Plane of Salvera through the planar scars that still remain from that ancient battle. The Scars can still be seen high in the sky of this demiplane that acts to try and contain these hostile energies and prevent their spread into the Material Plane proper.
