I just hit level 3 in D&D 5e with my Wizard. I can have 10 total spells in my spellbook now...some level 1 and some level 2 and I can have 7 prepared spells. What spells would you choose to have in your spellbook and which would you have prepared?

Thunderwave, sculpted, is good. Scorching Ray is fantastic, especially at higher levels when you can use your Int modifier on each ray. Misty Step and Shield are good defensive spells, but Mirror Image is the best (IMO), as it is not a concentration spell.

I don't think it's on each ray. I'd read that as being on the first ray and I think this was one of the questions asked of the designers and they replied that it would only count on one thing, like with magic missile as well.

Not with separate attack rolls. MM specifically states it hits the target simultaneously.
The wording of it is still "to any evocation spell" not to "each attack roll as part of a spell". And I can't find the quote but I'm sure the answer included more than just Magic Missile.

Grease has a small area affect, but it also doesn't require concentration. Sleep is great for groups of kobolds and small groups of goblins, but is little use against orcs unless you beat them down first. And again, Sleep is not concentration. Make sure you make use of the few non-concentration buffs and controlling effects, as combat gets a bit boring otherwise. As an Evoker, you can make the most of the school's instantaneous effects. Due to the Great Concentration Plague, Sculpt Spell seems untouchable when compared to the other arcane traditions.
