Then you've never had a good one. A good apple pie should be made with good baking apples (like a Granny Smith's) sliced, not diced and made with a sugar and lemon juice base that coats the apples and creates a sauce DURING the baking, not before. The apples are firm and tart, not wimpy and tasteless and complimented by the baked syrup not drowned by it.
